Present alongside soft, buttery pav (dinner buns), it's just scrambled eggs sautéed with onions, tomatoes, and spices. Quick to make, this dish is ideal for a light lunch or a hectic morning. Ingredients

  • 4 large eggs

  • 1 medium onion, finely chopped

  • 1 medium tomato, finely chopped

  • 1 green chili, finely chopped (optional, adjust spice level)

  • 1/4 cup fresh coriander leaves, chopped

  • 1/2 teaspoon turmeric powder

  • 1/2 teaspoon red chili powder

  • 1/2 teaspoon garam masala

  • 1/2 teaspoon cumin seeds

  • 1/4 teaspoon black pepper powder (optional)

  • 2 tablespoons oil or butter

  • Salt, to taste

Directions

  • Prepare the Ingredients

    • Crack the eggs into a bowl, add a pinch of salt, and whisk them well until frothy.
    • Chop the onions, tomatoes, green chili, and coriander leaves.
  • Cook the Egg Bhurji

    • Heat 2 tablespoons of oil or butter in a pan over medium heat.
    • Add cumin seeds and let them sizzle for a few seconds.
    • Add the chopped onions and sauté until golden brown.
    • Stir in the green chili, followed by the tomatoes. Cook until the tomatoes are soft and mushy.
    • Add turmeric powder, red chili powder, garam masala, and a pinch of salt. Mix well.
    • Lower the heat and pour the whisked eggs into the pan.
    • Stir continuously to scramble the eggs and cook until they are just set but still soft. Avoid overcooking to keep the eggs moist.
    • Garnish with fresh coriander leaves and set aside.

     

  • Toast the Pav

    • Heat a flat pan or tawa over medium heat.
    • Spread butter on the pav buns and toast them on the pan until golden and slightly crisp.
    • For extra flavor, sprinkle a pinch of pav bhaji masala or red chili powder on the buttered side before toasting.
  • Serve Hot

    • Plate the egg bhurji alongside the buttery pav buns.
    • Serve with lemon wedges, green chutney, or ketchup for an extra zing.
