How to Cook Traditional Beef Goan Curry

Traditional foods that have been passed down from generation to generation are magical to cook. This is especially true for Goan food. How to Cook Traditional Beef Goan Curry

Ingredients:

Here’s what you’ll need to make this delicious Beef Goan Curry (serves 4):

  • 1 lb (500g) beef (cut into bite-sized pieces)
  • 2 medium onions (finely chopped)
  • 3 medium tomatoes (pureed)
  • 1 cup coconut milk (fresh or canned)
  • 2 tbsp vegetable oil
  • 1 tbsp ginger-garlic paste
  • 1 tsp turmeric powder
  • 1 tsp red chili powder
  • 2 tsp ground coriander
  • 1-2 tbsp Goan curry masala (homemade or store-bought)
  • 2 tbsp tamarind pulp
  • Fresh cilantro (for garnish)

Optional:

  • 1-2 dried red chilies (for extra heat)
  • 1 cinnamon stick (for added aroma)

Instructions

1.Marinate the Beef:

Start by marinating the beef with turmeric powder, chili powder, and a pinch of salt. Let it sit for 20-30 minutes to soak in the flavors.

2.Prepare the Base:

Heat oil in a heavy-bottomed pan or Dutch oven. Sauté the onions until golden brown. Add the ginger-garlic paste and cook until fragrant.

3.Cook the Spices:

Add the ground coriander, Goan curry masala, and cinnamon stick (if using) to the pan. Let the spices bloom for about 1-2 minutes.

4.Add Tomatoes:

Stir in the pureed tomatoes and cook until the oil separates from the mixture. This step is crucial for creating a rich and flavorful curry base.

5.Cook the Beef:

Add the marinated beef to the pan and let it sear slightly. This locks in the juices. Then, add a cup of water, cover, and let it simmer for 30-40 minutes (or until the beef is tender).

6.Finish with Coconut Milk and Tamarind:

Once the beef is tender, lower the heat and stir in the coconut milk and tamarind pulp. Let it cook for another 5-10 minutes until the curry thickens.

 

7.Garnish and Serve:

Garnish with fresh cilantro and serve hot with steamed rice, naan, or crusty bread.
