  • 1 cup grated carrots (about 2 medium carrots)
  • 1 cup whole wheat flour (or all-purpose flour)
  • ½ cup chopped walnuts (optional)
  • ½ cup vegetable oil (or melted coconut oil)
  • ½ cup milk (dairy or plant-based)
  • 2 large eggs (or flax eggs for a vegan option)
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • 1 teaspoon cinnamon powder
  • ½ teaspoon nutmeg powder
  • 1 teaspoon vanilla extract
  • A pinch of salt

Instructions

Prepare the Dates:

Soak the pitted dates in warm water for 15 minutes to soften them. Once softened, blend them into a smooth paste using a blender or food processor.
